ORIENTAL ALMOND SALAD


1 bag shredded cabbage OR
1 head cabbage, shredded fine
2 pkg. Ramen soup noodles, chicken flavor
1/4 c. sunflower seeds
1/2 c. roasted slivered almonds

Combine cabbage, dry noodles, almonds, and sunflower seeds in large bowl.


~DRESSING:
1/4 c. vegetable oil
3 tbsp. vinegar
1 tbsp. sugar
Seasoning packet from noodle package

Mix all ingredients together and shake. Refrigerate at least 1 hour.Just before serving pour dressing on salad and toss. Do not add dressing until salad is to be served; it will wilt.
Variations: Add diced chicken for a heartier meal; add mandarin orange for sweetness; use Ramen oriental seasoning instead of chicken.

These deviled eggs are always a hit.

Ingredients:

  • 6 hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 1 1/2 teaspoons Dijon mustard
  • 1 green onion, very thinly sliced (slice little of green separate white)
  • a few leaves of fresh flat-leaf parsley, finely chopped, oprional
  • freshly ground black pepper
  • salt to taste
  • paprika, optional

  • Preparation:


Halve or quarter eggs; scoop yolks into a small bowl. Mash well; 
add mayonnaise and Dijon until desired consistency is reached. 
Stir in white part of sliced onion and most of the chopped parsley. 
Taste and add salt and pepper to taste. Using a small teaspoon or 
pastry bag, fill egg white halves or quarters. Sprinkle with sliced 
green onion and remaining parsley. Sprinkle with a little pepper 
and/or paprika, if desired. 

Makes 12 halves, 24 quarters. Recipe can be doubled.

Classic Potato Salad

ingredients

  • 2  pounds  potatoes (6 medium)
  • 1/4  teaspoon  salt
  • 1-1/4  cups  mayonnaise or salad dressing
  • 1  tablespoon  yellowmustard
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  black pepper
  • 1  cup  thinly sliced celery (2 stalks)
  • 1/3  cup  chopped onion (1 small)
  • 1/2  cup  chopped sweet or dill pickles or sweet or dill pickle relish
  • 6    Hard-Cooked Eggs, coarsely chopped (page 228)
  •     Lettuce leaves (optional)
  •     Paprika (optional)

directions

1. In a medium saucepan place potatoes, the 1/4 teaspoon salt, and enough water to cover. Bring to boiling; reduce heat. Simmer, covered, for 20 to 25 minutes or until just tender. Drain well; cool slightly. Peel and cube the potatoes.
2. Meanwhile, for dressing, in a large bowl combine mayonnaise, mustard, the 1/2 teaspoon salt, and the pepper.
3. Stir in the celery, onion, and pickles. Add the potatoes and eggs. Toss lightly to coat. Cover and chill for 6 to 24 hours.
4. To serve, if desired, line a salad bowl with lettuce leaves. Transfer the potato salad to the bowl. If desired, sprinkle with paprika.
5. Makes 12 side-dish servings

Basic Coleslaw







Here's a basic coleslaw with a tangy mayonnaise 

dressing and it's a great choice for summer meals. 

Serve this coleslaw with barbecue or sandwiches.

Ingredients:

  • 6 cups shredded cabbage
  • 1 carrot, shredded
  • 2/3 cup mayonnaise
  • 2 tablespoons vinegar
  • 2 tablespoons vegetable oil
  • 2 1/2 tablespoons sugar, or to taste
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon salt, or to taste

Preparation:

Toss cabbage in a large bowl with the carrots. 
In a bowl, whisk together the remaining ingredients. 
Pour the mixture over the cabbage and carrots and 
toss to coat thoroughly. Refrigerate until serving time.
Serves 6

Slow Cooker Hash Brown Casserole

I found this yummy recipe from About.com! Just what I needed as a side for my casserole! You can click the pic to see more of their YUMMY recipes. I was specifically looking for a side dish I could make in a crock pot and this was PERFECT!! Thought I'd share! Thank you ASK.COM!

This is a tasty hash brown casserole, and it's easy to prepare and cook
in the Crockpot. Serve this flavorful hash brown casserole with meat
or poultry, or serve it as a breakfast side dish. Feel free to use Cheddar
cheese soup in place of the nacho cheese soup.

Ingredients:

  • 30 to 32 ounces frozen shredded hash browns, thawed
  • 1 cup chopped onion, optional
  • 1 can (10 3/4 ounces) condensed nacho cheese soup, undiluted
  • 1 can (10 3/4 ounces) condensed cream of celery soup, undiluted
  • 8 ounces light sour cream
  • 6 tablespoons melted butter

Preparation:

Spray the crockery insert with nonstick cooking spray or lightly grease
the inside surface. Combine the thawed hash browns, onion, soups,
sour cream, and melted butter. Pack into the slow cooker insert. Cover
and cook on LOW for 5 to 6 hours.
Serves 6.

"Dan's" Chocolate Cake from Am @ The Family Trifecta

Dan’s Chocolate Cake

Many of you have commented on how delicious Dan’s cake looks and wondered if it was as tasty as it was beautiful.  The answer is yes.  And the best part about it is that it is super easy to make…

  1. Use any chocolate cake recipe (Dan used a devil’s food boxed cake mix) to make two 9″ cakes. 
  2. Create four layers by slicing each cake in half. 
  3. Spread seedless raspberry jam on each layer 
  4. followed by a thick layer of chocolate ganache 
  5. use whatever bittersweet chocolate you prefer and heat half as much cream, 
  6. add the broken chocolate to the hot cream and let it sit until melted, 
  7. when all melted stir together. 
  8. Spread the ganache over the top and sides of the assembled cake. 
  9. Grate white chocolate and coat sides of cake. 
  10. Add fresh berries and a sprig of mint as a garnish. 
  11. Top each slice with fresh whipped cream.
So, there you have it.  Easy and Yummy.
